Did you know that soup is a great way to pack in the nutrients? In this recipe, I use homemade bone broth for extra collagen, minerals, and fats; full fat coconut milk for more hormone and brain-building fats and sea salt for a boast in minerals which is needed for every chemical reaction in your body. This recipe is so easy and is sure to be a family favorite!
Ingredients:
2 28oz cans of organic diced tomatoes (or the evaluate of peeled fresh tomatoes)
1/3 can full fat coconut milk
2 small onions
1 quart chicken broth
1 teaspoon sherry or balsamic vinegar
2 spoonful's arrowroot powder
1 teaspoon monk fruit
Sea Salt
Pepper
Directions:
Heat 2 tablespoons of coconut oil, avocado oil or ghee in large pot. Coarsely chop onions and then add them to the pot. Add 1 teaspoon of salt and pepper to the onions and cook until onions begin to soften. Add both cans of tomatoes, broth, and 1 teaspoon of monk fruit. Allow the soup to simmer for 1-2 hours. (The longer the better!) Before pureeing add 2 spoonful's of arrowroot powder. Blend in batches or use an emersion blender. After the soup in fully pureed add in the vinegar and coconut milk. Season with more salt and pepper to taste. Enjoy!
